Coconut and date slice
Coconut and date slice

"This is a super easy, quick, yummy chewy slice that you can pull together in 15 mins plus 20 min baking time. Good for lunch box, morning teas. I used to bake it all the time when Elena was little and forgot about it. I'm hugely into my coconut at the moment - must be the Pacific thing obviously..." - Samara Vanderwal.

So yummy! If you are a fan of coconut (like I am) then this is too easy and is so fantastic. A lovely soft texture and full of coconut flavour - I literally craved one and went to the tin just then as I typed!

Makes 40 pieces. V.
