Recipe

The famous, kid-friendly snack that you must be aware of. Known for the cheesiness that they love, plus the sneaky veg, and high protein. It is great hot or cold. And super easy to make. A satisfying and healthy frittata-like snack, or side dish straight from the oven. The bacon adds great flavour and another reason kids gobble this up – however it works well as a vegetarian version it you prefer to omit. Great for lunchboxes.

Vary the ingredients with any other vegetables that grate well.

“Great with relish, easy finger food for a picnic”- Mardie Gray.

Makes 15 squares. Freezes well.

TasteTip - There is a dish called ‘kookoo’ originating in ancient Persia, where beaten eggs are mixed with chopped herbs, fried until firm and sliced to serve. It travelled to Western Europe via the Middle East and North Africa, where each country adapted the recipe to produce the well-known dishes the Italian frittata, Spanish tortilla and French omelette.
