These are Spanish tapas on toothpicks. The name Gilda comes from the 1946 film, starring Rita Hayworth as the passionate lead lady. They generally consist of three ingredients – an olive, a pickled chilli, and an anchovy.
Makes 20 .DF.GF.
Pictured: Gildas
20 large green olives, pitted (or 40 small)
20 of the best quality canned anchovy fillets you can find - e.g. Ortiz
20 small or slices of pickled green chillies - Calabrian guindilla or pepperoncino chillies/peppers
Plain salted potato crisps to serve
Strain the oil from the anchovies, prepare the chillies into slices if they are large.
In no particular order, carefully skewer onto a toothpick an anchovy, olive and chilli, double up your favourite ingredient if you like. Repeat until you have as many Gildas as you like. Serve with the crisps.
